Mexican beans

Here is a simple, but tasty recipe we tried out for a Sunday dinner.

I simply cooked it my cast iron pot, doing the frying in it first then adding the rest of the ingredients.





Mexican beans


-          2 pks bacon
-          1 onion
-          Garlic to your preference
-          2 carrots in pieces
-          1 ts chilli powder
-          1 ts cummin
-          1 dl fresh coriander ( or 1 ts coriander powder )
-          3 cans of beans
-          1 can peeled tomatoes
-          1 small bottle of cheap beer
-          Salt
-          1 lime


Fry the bacon with the onion, garlic, carrots and spices. 
Rinse the beans, then add them to the pot with the can of tomato and the rest of the ingredients.
Bring to boil, then turn down the heat and let it simmer for at least 20 minutes.
Add the lime juice/zest before serving.
Serve with sour cream, soft tortillas or bread.
